
It’s not that i hate cooking. It is more that i hate not doing good food justice. My mother is a chef. Ive also had the privilege of tasting seafood freshly caught from the ocean and tasting fruit freshly picked and veg still with dirt on it from the garden it was pulled from that morning. If all the food you’ve tasted has come from a can or jar or a box, yeah who cares about how it is cooked? The flavor is already gone in the first place. Why be precious with it? But, when i get my hands on good food, the idea of chucking it all in the pressure cooker together and pushing a button just makes me want to pull all my hair out.
I want all my veggies to have a nice browned side where its going to taste sweet and toasted. I want the broccoli and kale to have crisped in the oven so that its like a chip and there is a good crunch to it. I want my baby potatoes to have a crispy flat edge and a creamy center. I want everything in the skillet to have been cooked low and slow with spices infused into each bite and then turn the heat up at the end to get a nice brown spot on about half of the pieces. I want all my squash caramelized with no hint of sugar in sight, onions just the same…
I’m just all or nothing. So im either precious with it and i cook the whole day straight spending no less than 45 minutes on each item or i dont cook it at all and it rots in the fridge. Probably one of my toxic traits. Not likely to change soon.
